More Veggies!

Tell me you don't want to eat this. 
You can't, can you?  I know. 

Roasted Root Vegetables

6 carrots, peeled and sliced about 1/4 inch thick
3 red potatoes, cubed
2 sweet potatoes, peeled and cubed
3 tbs. olive oil
1 tbs. soy sauce
1 tbs. balsamic vinegar
2 tsp. brown sugar
1 tsp. dry thyme
1/2 tsp. garlic powder
pinch of red pepper flakes
Salt and pepper, to taste

Preheat the oven to 450 degrees.  Wrap a large baking sheet with foil, spray with cooking spray.  Put all ingredients into a large bowl and stir to coat veggies.  Pour out onto the prepared baking sheet and bake for 25-30 minutes, stirring a couple of times. 

Holy yum.
